It’s another snow day here in Virginia which means no school for the kiddos and no work for me! How lucky am I that I still get snow days! Sometimes I think I get more excited about them then the kids do! Typically I always try to bake up something on a day like this. When the kids were younger they would play outside for hours and I would have a homemade treat waiting for them. Now that they are older, they are more about relaxing inside and sleeping in, but they still look forward to my homemade goodies.

I always line my pan with parchment when I make any kind of bar cookie or brownie. It just makes it so easy to lift out whatever you are baking and also makes it’s easier to cut. Not to mention it makes for a easy clean up!


Cookies bars are the best of both worlds, all the yumminess of a traditional cookie but less work and mess! Which I’ve been all about lately. I love how quick and simple cookie bars are to make and these oatmeal chocolate chip cookies bars are so chewy and delicious you will love them as much as my family does.

Chewy Oatmeal Chocolate Chip Cookie Bars
1 C softened butter
1 C packed brown sugar
1/2 C sugar
2 eggs (room temperature)
1 1/2 tsp pure vanilla extract
1 tsp vanilla bean paste
1 1/2 C flour
2 C old fashioned rolled oats
1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
1 1/2 C semi sweet chocolate chips
Preheat oven to 350 degrees
Line 9 by 13 baking pan with baking spray and parchment
In a medium bowl using a hand mixer cream together the butter, brown sugar, and sugar together until combined.
Add eggs, vanilla extract and vanilla bean paste and beat until fluffy.
Add in the flour, oats, salt, baking powder, and baking soda. Mix until well combined.
Add in one cup of the chocolate chips and mix in by hand.
Spread the mixture evenly into prepared pan and sprinkle the remaining chocolate chips on top and lightly press them in.
Bake for 30 minutes and let cool completely.
Remove from pan and cut into squares.
